Elisabeth Moss was originally cast to star as Candy Montgomery but had to drop out in October 2021 due to scheduling conflicts, leading to Jessica Biel taking over the role.

The series was developed starting in July 2020 by UCP, with Robin Veith writing the pilot and Nick Antosca executive producing through his Eat the Cat banner, before Hulu picked it up in December 2020.

Principal photography took place from December 2021 through February 2022 in Austell, Georgia.

Musician Justin Timberlake appears in a recurring role as Deputy Steve Deffibaugh.

The miniseries was released internationally under the alternate title Candy: A Death in Texas.

Candy tells the same real-life case as the 2023 miniseries Love & Death, prompting critics to compare the two shows' differing approaches to depicting Betty Gore's murder.

Critics noted that Candy focuses more on the psychological character study of female rage, while Love & Death offers a more traditional dramatic retelling, with Candy revealing the victim's identity immediately to build suspense.

The series received a nomination for Outstanding Main Title Design at the 74th Primetime Creative Arts Emmy Awards.
