Once, Disney XD Latin America's third original series following Peter Punk (2011-2013) and Jungle Nest (2016).

Production of the series began on May 29, 2016, and was written and produced by Jorge Edelstein, who was also the creator of the series Soy Luna and Bia.

In casting, the production team preferred young people who could play football over those with acting experience; since everything in the series revolves around matches and football is not just an excuse, but at the heart of the plot.

Verónica Pelaccini, who played the role of Isabel Di Marco, also served as the casting coach for the series and taught inexperienced young footballers basic acting skills; she had previously done similar coaching work for Jungle Nest.

According to Pelaccini, working with female actors was easier because most had formal theater training and TV experience.

In the season one finale, the band Morat appeared in the series in their own role and performed the song 'Del estadio al cielo' for the season finale.

In season two, Michael Ronda, who played the character Simón Álvarez from another Disney series Soy Luna, appeared as a guest star in the series; this created a cross-reference.

Real footballers appeared as guest stars in their own roles in the series; in the second season Javier Zanetti, in the third season names like Carlos Bianchi, Marco Llorente, João Félix and Koke Resurrección appeared in the series.

The spinoff of the series O11CE: Nueva Generación was announced on April 11, 2025, and was filmed in locations in Argentina and Spain; it was announced that former footballer Sergio 'Kun' Agüero would also appear in a special episode.
